May and Leo - Bringing the flavours of Vietnam to Brisbane

May Tra and Leo Pham are proud of their Vietnamese heritage and its food so the opportunity to share the fresh flavours and healthy options people in Vietnam enjoy daily, is something they have embraced.

The success of their first Bake N Grill eatery at Southbank emboldened the pair to open a new store in the revitalised Post Office Square.

“Vietnamese food is very good for you and tastes wonderful because of its freshness,” May explains. “We are excited to share it with the people of Brisbane.

“The ingredients are local and seasonal and that helps us to keep the costs down making a Vietnamese lunch an affordable and healthy choice.”

May says the most popular dishes at Bake N Grill vary but you would have to go a very long way to beat the sheer demand for the banh mi bread rolls and the national soup dish pho.

“We purchase the banh mi daily at the Vietnamese market because it is the best,” May adds. “It is hand-crafted by artisans and is crispy and flaky. We add fresh vegetables, meats and sauces and then you have a really delicious and filling meal.

“Then there is the pho. We stew the pho from more than 40kg of beef bones and beef brisket for 10 hours in a 90-litre broth pot, along with grilled onions and grilled ginger and special herbs, bringing flavours which create an unforgettable, unique flavour of broth.

“It’s not hard to understand why it is so popular.”
